Hot cross bun and butter pudding

This is a great way to turn a classic Easter treat into a delicious pudding the whole family will enjoy.

  • 6 hot cross buns from New World’s bakery
  • 25g spreadable butter
  • 75g chocolate chips
  • 1 cup milk
  • 2 large eggs
  • 1Tbsp. caster sugar

Method

  1. Pre-heat oven to 180°C.
  2. Cut the hot cross buns in half and butter each cut side. Sprinkle with half of the chocolate chips.
  3. Sandwich the buns back together and place evenly in a baking dish.
  4. Beat the milk, eggs and sugar together. Pour this mixture over the buns.
  5. Scatter with the remaining chocolate chips and bake for 30-35 minutes or until just set.
  6. Serve hot with some cream or vanilla ice cream.

Tips:

  • Dust with icing sugar for some extra sweetness!
  • Add some cinnamon and vanilla essence to milk, eggs, and sugar batter for some extra flavour!

  • Is there a healthier option?
    • Of course! You can omit the sugar from the egg and milk mix. Similarly, you can remove the ice cream or cream altogether or swap it out with some greek yoghurt!
