Go-To Sizzling marinated beef fajitas

When you’re looking to get dinner on the table in a hurry, it’s hard to beat these quick and easy fajitas. Made with tender, juicy rump steak, this fresh and tasty dish will be a winner any day of the week.

  • 600g rump steak, trimmed
  • 2 tablespoons olive oil
  • 3 red capsicums, de-seeded and sliced thinly
  • 1 large red onion, peeled and sliced thinly
  • Soft tacos, to serve
  • Lettuce leaves, to serve
  • Lime wedges, to serve
  • Sour cream, to serve
Mexican Seasoning:
  • 1½ tablespoons paprika
  • 2 teaspoons dried oregano
  • 1 tablespoon ground cumin
  • 1 teaspoon chilli flakes (optional)
  • 2 garlic cloves, crushed
  • 1 teaspoon brown sugar
  • 1 teaspoon salt 
  • 1 teaspoon ground black pepper

  1. Combine all Mexican seasoning ingredients together in a small bowl and mix to combine. Reserve 1 teaspoon of the mix and rub the remainder over the steak. 
  2. Heat a heavy-based frying pan over high heat. Add the oil and then cook the steak for 3 minutes each side or until cooked through. Remove from the pan and transfer to a serving plate. Allow to rest for 5 minutes. 
  3. Reduce the heat to medium. Add the capsicum and onion to the pan and cook, stirring, for 3-4 minutes or until tender. 
  4. Transfer the capsicum and onion to a bowl. Slice the meat into 1cm strips, then place in another bowl or on a serving platter.
 
Cook’s Tips: 
Make it easier: To make this meal even faster to prepare, use a seasoning mix like Pams Mexican Spice Mix.
If you have leftovers, pop them in a pita pocket for lunch.
 
To Serve:
Serve as a shared meal with the meat, capsicum and onion on a platter. Accompany with warmed tortillas, lettuce, lime wedges, sour cream and extra Mexican seasoning.
