Bircher muesli with caramelised bananas, pecans and cacao nibs

What better way to start your morning than with this nutrition-packed Bircher muesli? You'll need to plan ahead with this recipe and prep this one the night before - but be assured, the wait is well worth it!

Ingredients

  • 550ml almond or cows milk
  • 2 1/2 tablespoons Pams Black Chia Seeds
  • 1 1/2 cups rolled oats
  • 2 tablespoons brown sugar
  • Seeds of 1 vanilla pod
  • 1/4 teaspoon of salt
  • 2 knobs of butter
  • 3 bananas, sliced
  • 1/4 teaspoon cinnamon
  • 1 teaspoon brown sugar
  • Pams Cacao Nibs, golden syrup and coconut flavoured yoghurt to serve

In a bowl, combine the milk, Pams Chia Seeds, rolled oats, brown sugar, seeds from the vanilla pod and salt. Once well mixed, cover and refrigerate overnight.

When ready to serve, melt 1 knob of butter in a non-stick frypan over a medium heat. Add the sliced bananas and fry on both sides until golden. Remove from pan and set aside. Add the pecans to the pan and fry until toasted, add another small knob of butter and the teaspoon of brown sugar. Stir until sugar has dissolved and pecans are coated.

Divide bircher between bowls, add a dollop of coconut yoghurt, caramelised bananas, candied pecans and finish with cacao nibs and golden syrup.
