Crispy Brekkie Fish Tacos

Ingredients

Method

  • 2-3 Gurnard – in strips
  • 2 beaten eggs
  • Splash of milk
  • 1 cup Pam’s Panko breadcrumbs
  • 1 tbsp Pam’s classic chilled guacamole
  • 1 pack Pam’s tortillas
  • 1 tsp Pam’s Finest sriracha flavoured mayonnaise
  • 1 bag Value bagged shredded lettuce
  • Squeeze Fresh lemon juice
  • Drizzle Butter/oil

1. Beat eggs and add a splash of milk 
2. Dredge fish in egg wash, coat in breadcrumbs 
3. Heat butter or oil in frying pan and add fish 
4. Remove when both sides are golden brown 
5. Warm tortillas one-by-one on a frying pan or hot plate, 10 seconds either side 
6. Sprinkle shredded lettuce in tortilla, place fish on top, add guacamole, add a fresh squeeze of lemon juice and a drizzle of sriracha mayo. Serve!
