Pork chops with feijoa sauce

Feijoas are really versatile and can be used in both sweet and savory dishes. This NZ grown fruit is in season from April to June - So give this delicious recipe a try and make the most of feijoa season.

  • 1 Tbsp butter
  • 1/4 cup peeled, mashed ripe feijoas
  • 2 pork chops
  • 1 tsp prepared mustard
  • 2 Tbsp flour
  • 1/4 tsp salt
  • 1 cup chicken stock
  • 1/2 tsp ground pepper

Method

  1. Melt butter in a fry pan, add pork chops and brown all over until cooked through.
  2. Remove from the pan, and keep warm.
  3. Add flour to pan drippings and cook for 2 minutes.
  4. While stirring, add chicken stock gradually to form a smooth sauce. Cook for 3 minutes.
  5. Add mashed feijoas, mustard, salt and pepper. Cook for 1 minute.
  6. Pour over chops and serve.

  • How long does it take to cook pork chops on a frying pan?
    • About 7 minutes on each side, and don’t forget to brown the fat on the edges too!
  • How can you tell if the pork chops are done?
    • If they are firm to the touch, they are done. If you wait longer, you will see juice oozing out of the top of a chop, meaning it is definitely done. You can also check the internal temperature of the pork with a digital thermometer; when the pork registers 71°C in the middle, it's done.
