Warm Quinoa Salad

Serves  4
Prep time: 10 minutes
Cooking time: 15 - 20 minutes



  • 3/4 cup uncooked quinoa
  • 1/2 red onion chopped
  • 1 cup of cooked peas
  • 1 cup shredded cabbage
  • 1 cup shredded carrot
  • 2 garlic cloves minced
  • 3 tablespoons soy sauce
  • 1 tablespoon honey
  • 2 tablespoons water
  • 1/4 cup peanut butter
  • 2 tablespoons sesame oil
  • 1 tablespoon olive oil
  • Juice of one lemon
  • 1 lime zest
  • 1 tablespoon lime juice (to serve)
  • 1 handful of pumpkin seeds

  • Rinse the quinoa under cold water, then pour into a saucepan with 1 and a half cups of water. Bring to boil then reduce heat and cover. Simmer for 15 mins until quinoa is cooked (all the water should be absorbed) Remove from heat and fluff quinoa with a fork. Place in a large bowl and set aside to cool.
  • Sauce: Heat olive oil and sesame oil in a pan until it is medium-hot. Then add garlic, peanut butter and honey, continuously stirring, then add soy sauce, lemon juice and water and stir until mixture is smooth and creamy.
  • Add the sauce to the quinoa then add mix in red onion, peas, cabbage, garlic, lime zest and carrots.
  • Garnish with pumpkin seeds.
